We are having a second Winter here in Kansas. It snowed today, so I decided that pasta and pizza sound pretty good for this week’s menu. Wouldn’t you agree?

Monday
This Vegetarian Shepherd’s Pie is a meatless version of a classic British/Irish dish. When you are craving comfort food this Monday, this pie will hit the spot. Serve it with my no-bake bread and enjoy a bowl or two!

Saturdays are for leftovers over here. Clean out the fridge and enjoy more time with your favorite book and tea!
Sunday
Fettuccine in creamy lemon ricotta sauce, with spinach and garlic – sign me up! This Lemon Ricotta Pasta is my favorite Spring pasta dish. I always top it with toasted Parmesan breadcrumbs for some crunch. It’s so good!

Have you seen the price of eggs these days? Oh my! This Eggless Chocolate Cake is made with no eggs or milk. You won’t believe how fluffy and delicious it is!
